forgive the obvious question.

I go into Duel - Solo Duel - Your deck, and select one of the preconstructed EDH decks, but when I start a game I'm at 20 life as is the AI, and I think i'm probably missing some really simple step to be in EDH mode instead of Standard mode.

Help?

Because some/a lot EDH decks were made few years ago and in the meanwhile the developers of the game needed to rearrange some card's ID numbers it is possible that the needed edh card that has to be in the deck has been substituted with another. You have to load edh deck to deck editor and put back the edh card if it is missing replacing a card and save it.
On how to play edh make your own edh decks or other formats see wiki:

Thank you Aswan, you were exactly correct. Every EDH deck had .14216 for the EDH card, which is now Anafenza. I bulk replaced .14216 with .14675, and it launches as an EDH game now.

You can also use the Playdeck Analyzer tool to convert your deck to the desired version/format
