It's correct behavior, albeit a bit counterintuitive.
Copy effects like Mirrorhall Mimic can only copy one side of double-faced permanents. That's the only set of characteristics of a permanent that exists at any point.
Now, Mirrorhall Mimic is, physically, a transforming double-faced card, which means it *can* technically transform. But it won't have much of an effect.
Let's assume that you used the Mimic to copy the front face of double-faced Werewolf. It has Daybound. Part of the rules for Daybound says:
"702.145c Any time a player controls a permanent that is front face up with daybound and it’s night, that player transforms that permanent. This happens immediately and isn’t a state-based action."
So, what happens when it becomes night? Your Mimic has daybound and it's front face up. That means it will transform to its other face.
But, alas! It still has the copy effect that copies the front face of opponent's Werewolf, and that effect still applies, so even though it HAS physically transformed, it will still be just the Human face of the Werewolf. What more, now it's BACK face up and has daybound, which means it no longer satisfies the condition of 702.145c, and won't transform again. Only permanents with daybound that are front face up can be affected by the automatic transformation. So it's stuck and since daybound prevents any transformation of its permanent except transformation it expressly allows, it will never transform back to the front face again.
If your Mimic copied the back face of opponent's Werewolf, it would be a permanent with front face up and nightbound, which would switch the transformations off immediately: nightbound cannot transform it because it is front face up and nothing else can transform it because it has nightbound.
