Describe the Bug:
Genju of the Fields can't be activated if the Plains it's attached to is a creature (whether from the Genju's ability or from something else like a Living Plane).

Which card did behave improperly ?
Genju of the Fields.

Which update are you using?(date,name)Which type(Duel,Gauntlet,Sealed Deck)
Dev, shortly past EMN.

What exactly should be the correct behavior/interaction ?
Being a creature shouldn't matter, and you should be able to add another copy of the El-Hajjâj-like effect for {2} however many times you want.
Rulings:
8/1/2005: When activated multiple times, it will have the triggered ability multiple times. When the animated Plains deals damage, the ability will trigger once for each copy of the ability. If, for example, you activate the ability three times, the Plains will deal two damage, and you'll gain six life.
10/1/2009: Activating the ability that turns it into a creature while it's already a creature will override any effects that set its power and/or toughness to a specific number. However, any effect that raises or lowers power and/or toughness (such as the effect created by Giant Growth, Glorious Anthem, or a +1/+1 counter) will continue to apply.

Are any other cards possibly affected by this bug ?
All the other Genju, though it usually doesn't matter for them. (The 10/1/2009 ruling for Genju of the Fields is occasionally relevant for them, but the 8/1/2005 ruling is part of Fields' core functionality.)

The activation bug is fixed in 388dbb7
As for the multi-lifelink-like-effect, I'll work on it.

Doesn't allowing multiple activations take care of that?

Both bugs here have been fixed.
However doesn't work correctly with effects that set p/t to a specific number like Sorceress Queen (only this tested). A new activation doesn't override those effects.
