I know combat AI is more difficult, but I just attacked the AI with 3 10/10 creatures, he had 10 life and 3 creatures, and he blocked one of my creatures with 2 of his in order to kill it, ignoring the fact that that killed him. Normally blocking is fairly intelligent, but this one... Not so much.

I would have, but the save was corrupt and I clicked straight through combat not expecting this result. The attacking crits were pumped Kraken tokens and the blockers were a Durkwood Boars and 2 Llanowar Elves (1 with Blanchwood Armor on it) if I remember correctly.
edit: my deck was composed only of planeswalkers and AI deck was random.

The decks name/type also help to reproduce this behavior

The AI doesn't seem to ever copy anything with Sculpting Steel. It just leaves it as a useless artifact.

AI Loaming Shaman seems to always target player gy, although it could be efficient against a reanimator deck, if it's not possible/time consuming to code behavior depending on opponent gy content it would be best that it always target itself instead for most case (vs mill deck and lib refresh).

The AI doesn't understand the ability of Wall of Vapor (and, I assume, most similar creatures, like Wall of Shadows); as a result, it refuses to use it to block even in situations where it would obviously make sense to do so (which is almost any case where it can.) I assume it will block with it in situations where the alternative is dying, since it views it as a chump-block, but it will not use it to block at any other time.
I've attached a save showing this behavior.

The AI has a lot of trouble with Banshee -- it spends more mana (and therefore more life) than it needs to kill things, and seems to spend odd amounts of mana even though there's no reason to ever do so (since that just costs you more life without increasing the damage.)
Additionally, in the attached save, the AI will repeatedly try to kill one of my regenerating creatures with Banshee, costing itself large amounts of life and eventually costing itself the game.

The AI doesn't seem to understand Remove Enchantments at all; in the attached save, it will cast it to no effect, even though there are no enchantments in play.
EDIT: Actually, this one might have just been because the AI was at 8 cards and would have discarded one otherwise -- I think the AI makes it waste cards rather than discard them. Which is still a bit odd, but not quite as bad.

The AI doesn't seem to understand that Blood Lust is incapable of lowering a creature's toughness below 1; in the attached save, if you pass enough turns, it eventually targets one of my creatures with it for no apparent reason -- presumably it thinks the card will kill it?

The AI doesn't understand that Clergy of the Holy Nimbus will regenerate unless it pays mana; it will try and trade off with it for another 1/1 even in situations where the clergy will regenerate and chump-blocking makes no sense.

Don't know exactly how auto selection of creature type is done so don't know if this is feasible, but when casting Patriarch's Bidding, AI choose the best creature in his deck, even though there were none in his gy and other creatures there.
